I had the same reaction to the polpette, and looking it up directed me to a Mario Batali recipe whose finished product looks akin to this one… but not as mouth-watering! 🙂 Your weekend photos are such lures, Jen. I may even break down and deep-fry this week!
Ah, tuna croquettes (ish). I do something similar using salted cod leftovers instead of tuna.
i used to make lasagna rolls all the time – i would place leaves of basil on the cooked sheets of pasta, then cover them with ricotta cheese, parm, marinara, pesto and sauteed veggies. when they were rolled, you saw the basil through the noodles. i totally forgot about them – thanks for reminding me!

Thanks, everyone! The tuna polpette were inspired by Mario’s recipe, but with a few changes. I sort of did them on the fly, but we loved them – I plan to do them again in the next week or so and take notes so I can write it up. Stay tuned… 🙂
