I cooked all weekend. I chopped, blanched, peeled, pickled, froze, simmered, pureed, braised, and stewed.

I stood for hours, tasting and tweaking, and I am exhausted, but happy. This weekend was all about celebrating the present, but looking toward the future as well.

  1. Nice to see someone else still knows how to Concasse tomatoes! Finding fewer and fewer restaurants, even nice ones, which don’t bother to remove skins before making tomato dishes. Lazy!

  3. I’m assuming the fate of the fruit in bags was for the freezer.

    One suggestions… Since one of my goals is to produce, preserve and feed my family from our farm I have two deep freezes full of wonderful food. Pesto, chicken, nettles, lamb, peas, beans, corn, tomatoes, blueberries, beets, etc…

    Our intention is capture as much of our growing season to feed us until the next years bounty. So we invested in a high end vacuum sealer and it improves the quality of our frozen food.

    This year I’m doing more dehydrating, including sweet corn kernels that I ground for corm meal. Very nice flavor.
