I spent so much time preparing for last weekend’s entertaining that I completely spaced on planning meals for the beginning of this week. I realized this, of course, last night around 7, when I arrived home from a long day in Boston and was in no shape to head out again for fresh ingredients. Eating out or ordering in weren’t options due to the somewhat tight budget we’re on this week, so I took a look through the fridge and pantry to see what I could cobble together.
I came up with a vodka sauce, flavored with the last of Mike’s garlic confit and lots of freshly grated Pecorino Romano. We were out of both fresh and canned tomatoes, so a squirt from my trusty tube of San Marzano paste gave the sauce it’s rosy hue. Tossed with penne and a scattering of chopped fresh parsley, it made for a simple but satisfying spur of the moment meal.

It’s thrown-together meals like these, rather than successfully following a recipe, that make me feel like a decent cook.
