    Those tacos look wonderful. I’ve had trouble finding really good soft tortillas at the store, what brand do you use? (Or do you make them from scratch?)

    Mo – I buy Tortilleria Piaxtla corn tortillas at our farmers’ market. If you have a good Mexican grocery near you, I’d start there – you’ll get far better quality tortillas there than at a supermarket. And be sure to soften them before filling and/or eating them. I fry mine just until soft in a tiny bit of melted rendered fatback or lard and hold them wrapped in a towel so they stay warm and pliable, but you can use a little bit of neutral oil like canola, too. Some people use water but I haven’t been happy with the results – they tend to crack and fall apart if they sit for more than a few minutes.

    Ha! Sean, it’s brontosaurus, dontcha know. 🙂 (Just kidding, it’s just rare grass-fed skirt steak – we have odd lighting in the kitchen in the evening.)
